Malin was a little bored today and she decided that she’d like to make cookies. By herself. She picked out the recipe all by herself. I don’t remember ever making these cookies- ever. But I figured, if she was going to make them, she needed to have ownership of them and I wouldn’t interfere with her choice. I was going to help her, and I did, a little, but Vienne had a little run-in with the coffee table Craig was repainting and ended up with black paint in her hair. And into the shower she went. I was sort of running between the two girls, and not really doing as much “helping” as I thought I would.
These cookies are REALLY GOOD. REALLY, REALLY GOOD. You need to make these right now. Its Saturday night, so a good movie, a plate of warm cookies and a glass of cold milk was how you were planning on spending the evening anyway, weren’t you?
Ok here goes.

(This picture was not taken by me, as my camera is broken. But this photo looks just like how they turned out. Sorry for cheating.)
Malin’s Double Chocolate Dream Cookies
1 cup softened butter
1 cup packed brown sugar
3/4 cup granulated sugar
1 teaspoon vanilla
2 large eggs
2 1/4 cups flour
1/2 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips
Preheat your oven to 375º. Spray your cookie sheets with Pam (or whatever it is you do.)
Combine butter, sugars, and vanilla in a Kitchen Aid. Beat until creamy. Take a little taste to make sure its ok. Add the eggs and beat on a high speed until creamy, light and fluffy. This should take about 2 minutes.
Gradually add the dry ingredients (we don’t typically do the whole sift together thing and the world continues to revolve on its axis) and beat until well mixed. Carefully stir in the chocolate chips.
Drop by rounded tablespoonfulls on your previously greased cookie sheets.
Bake for 8-10 minutes, rotating sheets halfway through. (We tend to like our cookies a little chewy so we opt for the shorter time.) Cool on the sheets for 2 minutes and then move to paper towels or a cut-up paper bag to cool completely.
Enjoy!
(It won’t be hard.)
