i don’t post about food enough. and i love food. a lot. here’s the recipe for what was in my crock pot today. it sounds so weird, but it was good. soooo good. craig said this was “top 5.”
he’s pretty easy going about food, but i don’t get that compliment too often. maybe like once a year. the funny thing is, this was like, no work whatsoever.
ok here goes:
peperoncini beef sandwiches
2 lb beef roast (the pot roasting kind)
1 16 oz jar of mild peperoncinis
muenster
ciabatta rolls
-put your roast in the crock (mine was semi-frozen)
-gracefully dump the jar of peperoncinis on the top
-close lid, set on low for a while (i put mine in around 7:20am ish and it was ready by 5pm)
-shred the beef, put on already toasted ciabatta rolls, top with muenster and broil for a minute to melt the cheese. serve with the peperoncinis.
holy cow this was good. i didn’t even suggest that the kids had to eat the peperoncinis, that just left more for me.
